Tasting note

While intense in colour, it remains dry, deliciously fresh and floral. This is a rosé made for sunny days, light-bodied yet remarkably textured, finishing with a savoury salinity.

Pinot Noir leads the way with expressive aromas of wild strawberry, cherry and crushed raspberry. Oli’s winemaking is built for complexity and elegance, using neutral old oak for maturation to give a soft, juicy texture on the palate. Pinot Blanc and Chardonnay bring fleshy white peach and watermelon flavours, balanced by a bright, crunchy acidity.

Food Pairing

Packed with flavour this rosé works brilliantly with seafood and salmon dishes. Perfect for summer salads and refreshing afternoons in the garden, with picky bits of charcuterie and meze.

Technical Specifications

Grape varieties:
64% Pinot Noir, 21% Pinot Blanc, and 15% Chardonnay

Alcohol:
11.5 %. No chaptalisation (the addition of sugar to adjust abv) meaning the alcohol comes 100 % from natural sugars. A warm and ripe vintage, yielding brilliantly intense fruit, picked early for freshness.

Titratable acidity:
8.2 g/l - just how we’d want a rosé to be, bright and zingy, balanced by a soft, fleshy finish.

Residual sugar:
3 g/L - we added a tiny bit of sweetness as dosage, just before bottling, to balance the fresh acidity and give a bright fruity finish.

Vinification

2025 was a warm and ripe vintage, yielding brilliantly intense fruit. Pinot Noir and Pinot Blanc grown here at Flint make up the majority of the final blend. Most of the Pinot Noir was gently pressed as blush juice into neutral oak barrels, while a small proportion was ‘saignée’, taken from a red wine fermentation in a concrete tank.

We blended this with tropical, juicy Pinot Blanc and bright, lemony Chardonnay, both of which were also fermented in neutral old oak barrels. We allowed the wine to go through malolactic fermentation during maturation to soften the acidity and add a creamy texture. While the finish remains crisp and saline, we added a tiny amount of residual sugar just before bottling to give the wine a juicy, playful style.
