Technical Notes
Grape varieties:
39 % Chardonnay, 28 % Pinot Blanc, 17 % Pinot Gris, 16 % Pinot Noir. The 2023 blend puts Chardonnay at the fore, balancing its elegance alongside the structure of the Pinot varieties.
Alcohol:
12 %. No chaptilisation (the addition of sugar to adjust abv) meaning the alcohol comes 100 % from natural sugars, giving a light-bodied but for the UK a relatively high alcohol wine.
Titratable acidity:
8.2 g / L - a linear but balanced acidity, which supports the textural and oily mouthfeel of the wine.
Residual sugar:
<0.5 g / L means that we've not added any sugar to back sweeten the wine. Any residual sugar comes from unfermented grape sugars. The wine is bone dry.
Vinification
Whole-bunch, ultra-gently pressed coeur de cuvée juice allows the fermentation to be started without settling. The turbidity of juice that we yield at the press is perfect for encouraging a slow fermentation, which promotes varietal character and complexity.
Fermentation, malolactic fermentation and 12 months ageing with lees stirring (bâtonnage) all happens in 225 L barrels (80 % 3rd-fill / 20 % new). The interaction of yeast and lactic acid bacteria in oak enhance complex flavours and the use of both new and older oak lends a balanced texture.
Ingredients
Grapes harvested from Flint Vineyard, Martin's Lane Vineyard (Crouch Valley, Essex), Whitewolfe Vineyard (North Downs, Kent). Indigenous yeasts and active dried yeasts. Minimal Sulphites (<20 mg / L) - enough to protect from oxidation but well within the principles of low intervention. The wine is not cold stabilised or fined so we've made no additions to aid this. The wine is also very gently filtered at 5 micron to encourage the retention of aroma and texture.
