Boldly fruit-forward, subtly nuanced, textured

Silex 2023

Pinot Noir, Pinot Blanc and Chardonnay have dominated the seven vintages of the Silex living blueprint, with Pinot Gris, Meunier, Bacchus and Solaris all making vital contributions, dependent on what each harvest has given us.

We then craft Silex to develop and emphasise complexity and depth, through whole-bunch pressing, fermentation in barrel, stainless steel tanks and amphora, and skin-contact techniques.

Generous upon release but also one for collectors and people who know, its complexity will continue to develop over time.

With every vintage Silex takes a confident step forward.

Tasting Notes

Silex offers aromas of citrus, apricot, baked pear, gentle cinnamon spice, butter and biscotti—a captivating introduction to what follows on the palate.

The wine is dry yet soft, revealing delicate tannins and a textured mouthfeel that reflect its skin-contact fermentation. Then orchard fruit, hazelnut and marmalade emerges on the long, structured finish.

Food Pairing

An intelligent, rewarding and above all delicious wine, Silex is also a broad, versatile food pairing canvas. Try Silex with shellfish, grilled asparagus or a nutty cheese like Comté.

Technical Notes

Grape varieties:
39 % Chardonnay, 28 % Pinot Blanc, 17 % Pinot Gris, 16 % Pinot Noir. The 2023 blend puts Chardonnay at the fore, balancing its elegance alongside the structure of the Pinot varieties.

Alcohol:
12 %. No chaptilisation (the addition of sugar to adjust abv) meaning the alcohol comes 100 % from natural sugars, giving a light-bodied but for the UK a relatively high alcohol wine.

Titratable acidity:
8.2 g / L - a linear but balanced acidity, which supports the textural and oily mouthfeel of the wine.

Residual sugar:
<0.5 g / L means that we've not added any sugar to back sweeten the wine. Any residual sugar comes from unfermented grape sugars. The wine is bone dry.

Vinification

Whole-bunch, ultra-gently pressed coeur de cuvée juice allows the fermentation to be started without settling. The turbidity of juice that we yield at the press is perfect for encouraging a slow fermentation, which promotes varietal character and complexity.

Fermentation, malolactic fermentation and 12 months ageing with lees stirring (bâtonnage) all happens in 225 L barrels (80 % 3rd-fill / 20 % new). The interaction of yeast and lactic acid bacteria in oak enhance complex flavours and the use of both new and older oak lends a balanced texture.

Ingredients

Grapes harvested from Flint Vineyard, Martin's Lane Vineyard (Crouch Valley, Essex), Whitewolfe Vineyard (North Downs, Kent). Indigenous yeasts and active dried yeasts. Minimal Sulphites (<20 mg / L) - enough to protect from oxidation but well within the principles of low intervention. The wine is not cold stabilised or fined so we've made no additions to aid this. The wine is also very gently filtered at 5 micron to encourage the retention of aroma and texture.
