Tasting note

Silex 2024 reflects the cool precision of the vintage, its character shaped by Chardonnay, supported by Pinot Blanc, Pinot Noir, and Pinot Gris. Aromas of lemon curd, white peach, and almond are lifted with mineral freshness. Concrete egg contributes purity and tension, while neutral oak brings subtle breadth. Full malolactic fermentation softens the texture, and a year on lees builds savoury detail.

A small addition of 2023 Chardonnay enhances depth and continuity. The palate is bright and waxy, layered with citrus and orchard fruit, framed by taut acidity. Poised, complex, and confidently evolving.

Food Pairing

Silex 2024’s crisp, fresh style and layered complexity make it a natural partner for hearty roasts and seasonal dishes. A wine that steps confidently into the spotlight alongside great food, music, and people.

Technical Specifications

Grape varieties:
66 % Chardonnay, 24 % Pinot Blanc, 6 % Pinot Noir, 4 % Pinot Girs. The 2024 blend puts Chardonnay at the fore, balancing its elegance alongside the structure of the Pinot varieties.

Alcohol:
11.5 %. No chaptilisation (the addition of sugar to adjust abv) meaning the alcohol comes 100 % from natural sugars, giving a light-bodied but for the UK a relatively high alcohol wine.

Titratable acidity:
8 g / L - a linear but balanced acidity, which supports the textural and oily mouthfeel of the wine.

Residual sugar:
<0.5 g / L means that we've not added any sugar to back sweeten the wine. Any residual sugar comes from unfermented grape sugars. The wine is bone dry.

Vinification

The fruit was whole-bunch pressed, with only the finest juice selected for fermentation. Slow, cool fermentations took place in concrete egg, neutral oak, and seasoned barrels, each vessel contributing distinct character: purity and tension from concrete, subtle breadth from oak. Full malolactic fermentation softened acidity and enhanced texture, while 12 months on gross lees built
depth and savoury character.

The final blend includes 25% Chardonnay that was fermented and matured in a concrete egg, and the addition of three barrels of Chardonnay from the 2023 harvest, both contributing to an enhanced complexity and smoother mouthfeel.

Vegan friendly. Gluten free.
Allergens: Contains Sulphites.

Ingredients

Grapes harvested from Flint Vineyard, Martin's Lane Vineyard (Crouch Valley, Essex), Whitewolfe Vineyard (North Downs, Kent).
Indigenous yeasts and active dried yeasts.
Minimal Sulphites (<20 mg / L) - enough to protect from oxidation but well within the principles of low intervention.
The wine is not cold stabilised or fined so we've made no additions to aid this. Unfiltered, so this wine may throw a slight harmless sediment.
