Since 2017 each Silex has taken a lead from its predecessor, honouring, passing forward and then weaving in new ideas and techniques.
Pinot Noir, Pinot Blanc and Chardonnay have dominated the seven vintages of its living blueprint, with Pinot Gris, Meunier, Bacchus and Solaris all making vital contributions, dependent on what each harvest has given us.
We then craft Silex to develop and emphasise complexity and depth, through whole-bunch pressing, fermentation in barrel, stainless steel tanks and amphora, and skin-contact techniques.
Generous upon release but also one for collectors and people who know, its complexity will continue to develop over time.
With every vintage Silex takes a confident step forward.

Alcohol: 12 %
Titratable acidity: 8.2 g/L
Residual sugar: <0.5 g/L.
39% Chardonnay
28% Pinot Blanc
17% Pinot Gris
16% Pinot Noir
Vinification
Whole-bunch pressed coeur de cuvée juice was fermented slowly at cool temperatures in a combination of neutral and new oak.
100% malolactic fermentation, lees stirring and a further 12 months ageing in barrels.
Vineyard
This year’s blend of grapes were all hand harvested from our own parcels and two special vineyards; Whitewolfe in Kent and Martin’s Lane in the Crouch Valley, Essex.
