"This is really appealling with nice depth and focus, and a really nice balance between the acidity and dosage. Very stylish. 91/100."

Boldly fruit-forward, subtly nuanced, textured

VMV Late Disgorged

VMV Late Disgorged (LD) is the result of an eight year obsession to make the best traditional method sparkling wine we possibly could.

A blend of Pinot Noir, Chardonnay, and Meunier, it’s aged for longer to unlock exceptional depth and complexity. This is Flint sparkling at its peak - rare, refined, and effortlessly elegant.

Only 600 bottles were made, making this a rare gem for those who appreciate the art of patience and craft. Perfection doesn’t happen overnight, and this was worth the wait.

Tasting Notes

Five years on its lees has worked magic on VMV LD, unlocking outstanding depth and nuance. Baked apple, bright lemon peel, and a touch of spice glide through a fine, creamy mousse. Extra Brut and razor-sharp, this wine is fresh, complex, and built to go the distance.

Food Pairing

VMV LD shines with oysters, lemon-dressed crab, or truffle-laced roast chicken, but its depth also makes it a match for aged Comté or wild mushroom risotto. Perfect for celebrations - or just because exceptional fizz deserves its moment.

Technical Notes

Grape varieties:
39 % Chardonnay, 28 % Pinot Blanc, 17 % Pinot Gris, 16 % Pinot Noir. The 2023 blend puts Chardonnay at the fore, balancing its elegance alongside the structure of the Pinot varieties.

Alcohol:
12 %. No chaptilisation (the addition of sugar to adjust abv) meaning the alcohol comes 100 % from natural sugars, giving a light-bodied but for the UK a relatively high alcohol wine.

Titratable acidity:
8.2 g / L - a linear but balanced acidity, which supports the textural and oily mouthfeel of the wine.

Residual sugar:
<0.5 g / L means that we've not added any sugar to back sweeten the wine. Any residual sugar comes from unfermented grape sugars. The wine is bone dry.

Vinification

Whole-bunch, ultra-gently pressed coeur de cuvée juice allows the fermentation to be started without settling. The turbidity of juice that we yield at the press is perfect for encouraging a slow fermentation, which promotes varietal character and complexity.

Fermentation, malolactic fermentation and 12 months ageing with lees stirring (bâtonnage) all happens in 225 L barrels (80 % 3rd-fill / 20 % new). The interaction of yeast and lactic acid bacteria in oak enhance complex flavours and the use of both new and older oak lends a balanced texture.

Ingredients

Grapes harvested from Flint Vineyard, Martin's Lane Vineyard (Crouch Valley, Essex), Whitewolfe Vineyard (North Downs, Kent). Indigenous yeasts and active dried yeasts. Minimal Sulphites (<20 mg / L) - enough to protect from oxidation but well within the principles of low intervention. The wine is not cold stabilised or fined so we've made no additions to aid this. The wine is also very gently filtered at 5 micron to encourage the retention of aroma and texture.
