Description

An early ripening clone of Pinot Noir that was hand harvested in October from our own small parcel and Martin’s Lane vineyard in Essex.

50% semi-carbonic maceration using a fruit-forward yeast strain and 50% crushed fruit using a classic Burgundian yeast.

Tasting Note

Silky smooth and fruity on the palate with integrated tannins leaving a textured finish. The wine has not been cold stabilised and might throw a small crystalline deposit. This is harmless and demonstrates its minimal handling.

Technical information

50 % whole bunch, 50 % crushed fruit fermentation. 6 months ageing in neutral oak (3rd and 4th fill). 100 % malolactic fermentation. Minimal filtration. No fining agents have been used so the wine is vegan friendly gluten free. Alcohol: 12 %, residual sugar: <0.5 g/L, titratable acidity: 6.8 g/L.
