We are celebrating the news that we have been awarded a grant from the Eastern Agri-Tech Growth Initiative for some exciting research and development work on the grape variety Bacchus.

Bacchus is the most exciting English grape variety for making white wines in a Sauvignon blanc style.  We hope to push its potential to the limit.

With the funding, we will first be analysing in detail the special aroma compounds found in Bacchus, mapping them with the most advanced wine science.  This will help us better understand the grape’s intriguing properties, which stem from it being a cross of Riesling and Sylvaner, two aromatic varieties.

After this we will develop a number of fermentation trials and learn how different techniques applied in the vineyard and winery affect the finished wine.  We hope to share this with the wine industry but also use the experience to create a world-class example of Bacchus.
