Read more about how our winemaker Ben Witchell has evolved our Bacchus wines \u003ca href=\"https:\/\/flintvineyard.com\/blogs\/flint-labs-diaries\/goodbye-bacchus-hello-fume\" title=\"Flint Labs Diary: Goodbye Bacchus, Hello Fumé\" rel=\"noopener\" target=\"_blank\"\u003ehere\u003c\/a\u003e.\u003c\/p\u003e\n\u003cp\u003eThe fruit was harvested by hand from our own vines and a parcel from Martin's Lane Vineyard in the Crouch Valley, Essex.  To express the complexity of the Bacchus grape, we use a multitude of techniques that respect both the traditional and more novel methods of winemaking. \u003c\/p\u003e\n\u003cp\u003e40% fermentation and ageing in 3rd-fill oak barrels lends texture and \u003cspan style=\"font-size: 0.875rem;\"\u003eencourages aromatic development rather than oak flavour.
