Pinot Gris hand picked by Venn members from our newest vineyard plot. Fermented on its skins and then transferred to barre. A complex, delicate and textured blush rosé.

Tasting notes

Ever since the first harvest of Pinot gris from our Plantation vineyard in 2020, I’ve been keen to make a single variety wine from this. It is such a beautiful grape when ripe – a grey / pink colour on the skins and wonderfully sweet and aromatic.

A small yield was taken this year from our parcel of 1,500 vines. The fruit was crushed and de-stemmed and transferred directly to a 500-litre micro fermentation bin using no sulphite additions and inoculated with a ‘native’ style non-Saccharomyces yeast strain. The skins were left in contact with the juice during the first 7 days of fermentation, in a similar fashion to making red wine, and punched down daily. After 7 days, the fermenting wine was transferred to barrel and re-inoculated with the sediment (lees) from a completed Bacchus fermentation. The wine completed fermentation in barrel and was then aged for 5 months, avoiding malolactic fermentation to preserve fruit quality and freshness.

The effect of the skin contact fermentation has resulted in a textured and unique wine. Notes of bramble and spice sit alongside a breeziness and fresh acidity which suggest this could be a good wine for the Summer, much like our previous Bacchus Blush. This a good wine for drinking early but given the acidity and tannins from the skin contact fermentation, it could develop very well with time in bottle.
