The Silex Blanc demonstrates Ben’s desire to produce a wine that is different to the typical English style. Using Pinot Blanc and Chardonnay, these classic grape varieties were previously considered difficult to grow and ripen in the UK’s climate. But modern approaches and knowledge have shown that excellent high quality wines can be made and the Silex has garnered a reputation for being one of these.
The fruit was taken from our own vineyards and a partner vineyard in Essex (Martin’s Lane) who focus on growing premium Chardonnay. The grapes were gently whole bunch pressed and the juice fermented and aged in neutral oak barrels sourced from a winemaker friend of Ben in Burgundy. Partial malolactic fermentation lends softness and considered use of skin contact adds texture making it a great pairing with food.
The Silex 2021 is tasting great now but can be cellared for up to five years when it will improve in bottle.
Tasting notes
Bright and zesty on the nose but with softer apricot and honeysuckle notes. The palate is taught and dry yet smooth, with excellent acidity and texture. There is a long finish tasting of hazelnut, raising and shortbread, with an almost ‘Marc de Bourgogne’ character.
