This rosé is a blend of two very distinct early ripening grape varieties: Cabernet Cortis and Rondo. Cabernet Cortis is related to Cabernet Sauvignon but ripens very early and produces wines that are full of pink grapefruit and confected aromas. Rondo is a deep red skinned variety that lends complexity and texture.
The grapes were hand sorted upon arrival at the winery and whole bunch pressed under inert gas using a very gentle, long pressing cycle. No additional skin contact time was required, naturally yielding beautiful, bright pink juice from each variety. The two varieties were cool-fermented separately using ester-producing yeast strains. Malolactic fermentation did not take place and the wines were aged in stainless steel under inert gas to help preserve the colour and fruit quality. No fining agents were used only gentle handling meaning the wine is vegan friendly and gluten free.
The nose is alive with strawberries and cranberry and the palate is bright and full of red fruits with a delicate herbaceous character. A textured and linear finish, with a hint a residual sugar balances the lively acidity and matches the vibrant colour. This is a bold rosé – one that can be enjoyed on its own or to accompany a summer lunch.
