The near-perfect summer of 2016 meant the grapes destined for this wine were of extraordinary quality and ripeness. This is a classic, refreshing Pinot blanc in an Alsace style, with flavours of ripe apple and lemon.
At the press the grapes were pressed as a mixture of whole bunches and de-stemmed berries using a long, gentle cycle. This produced a pure juice with texture and flavour from the skin contact. The juice was then fermented partially in stainless steel and partially in French oak with malolactic fermentation being allowed to complete to differing levels for each lot to add complexity.
3 months lees ageing and a portion ageing in oak resulted in a silky texture and impressive length.
