A complex and layered Bacchus with notes of elderflower, tropical fruits and lime on the nose. The palate is crisp with a subtle texture derived from a small portion of barrel-fermented Bacchus.
The grapes were hand-sorted upon arrival at our winery before being gently pressed. Half of the grapes were pressed as whole bunches and half were de-stemmed but all under inert gas, to maximise aromas.
The philosophy behind this wine was to express the full potential of the wonderful Bacchus grape. A number of small fermentations were carried out at different temperatures using a range of selected yeast strains and the wine was treated with utmost care from beginning to end with minimal handling to retain the aromas that make Bacchus so enticing.
