2017 was a vintage that resulted in low-yielding, high quality fruit and this Bacchus was made from some of the ripest and cleanest grapes possible. In addition to this a small percentage of the grapes were picked on the cusp of ripeness. These differing ripeness levels give individual expressions of Bacchus; the ripe fruit producing tropical aromas and the just ripe fruit lending delicacy and freshness.
The grapes were hand sorted and handled with upmost care at the winery before being pressed using different techniques: some as whole bunches, some de-stemmed but all under inert gas to preserve aromas. The free-run juice was separated from the later pressings and fermented using a variety of temperatures and yeast strains to yield six very different component wines each expressing a different aromatic trait of this alluring grape variety.
These individual wines were then carefully blended to give a complex and intensely aromatic example of Bacchus, making the most of this complex variety that is fast becoming recognised for producing premium still wines. No fining agents were used only gentle handling meaning the wine is vegan friendly and gluten free.
The nose is intense and full of lime, gooseberries, cut herbs with an underlying elderflower fruit. On the palate the wine is crisp with a lovely texture that lends an excellent length. It pairs beautifully with smoked fish and spicy dishes and is wonderful at a BBQ on a hot summer’s day.
